I'd say it depends on your material. You can work internally up to 32 bits (depending on your recording software) but whenever you go trough the ADAT interface it's a maximum of 24 bits.

Creamware cards always work internally at 32bits. What you can select is the bit depth of the audio drivers you use(ASIO, WDM...) and the sampling rate.
24bit should give you enough headroom for a good mix. If you produce for CD, I agree with Gary, but be sure that you dither your stuff down to 16bit for the final CDmix.
I use no ADAT´s at the moment and run my Cubase/Pulsar duo in 44.1kHz 32bit/TrueTape.
