if it not features an FX chain inside is almost useless to be stereo.
Put a stereo delay or chorus after Pro One and you will obtain a true stereo synth.

It's only got the one out though so sound only goes left or right if I do that depending on which in I use

You can have as many outputs of ANY device in Scope - that's the beauty of the software. You can send that mono signal to left AND right of a chorus device for example (although most devices also allow a mono input creating a stereo output: it's the symbol that looks like two concentric circles).

Continuing that thought, you can also have two instances of ProOne, hard panned left/right, and detuned a bit for separation. Both fed from the same MIDI source (just like forking the audio as Mr. A pointed out above). Requires 2x the dsp for the same poly count, of course.

Another way to achieve a 'stereo' input off of a device that is mono is to connect the device to the L input, then click the L input (triangle) and connect that down to the R input.
In Scope midi can be connected from a single output (sequencer source, midi in A etc) to multiple destinations but audio is the opposite, it can only be connected once then you can duplicate off of that input. I do this to send identical signals to split signal chains or send identical signals to asio dest & adat outputs, and so on.

That's cool - didn't know I could do that, thanks
