There's a new free online course from the Stanford University available here:
https://www.coursera.org/course/audio

The official start is September, 21st.
You can already sign up now and prepare for it, though.

COURSE SYLLABUS
Week 1: Introduction; basic mathematics
Week 2: Discrete Fourier transform
Week 3: Fourier transform properties
Week 4: Short-time Fourier transform
Week 5: Sinusoidal model
Week 6: Harmonic model
Week 7: Sinusoidal plus residual modeling
Week 8: Sound transformations
Week 9: Sound/music description
Week 10: Concluding topics; beyond audio signal processing

Interesting.

They don't deal with filters? Almost every DSP book I've read starts with a simple FIR filter. Then IIR, etc and how to design them. FFT is not really real time.

I would recommend this book for anyone starting to learn. Yes, it's old, but it's somewhat easy to read. I think I have two copies. Paid a dollar for each one. The examples are in Turbo Pascal, but can be easily converted to C/C++.
